CASSAVA (YUCA) CHEESE BITES

Learn how to make a delicious cassava bites with only 4 ingredients. No need for oil or butter!

The bites are crunchy on the outside and soft on the inside. They taste amazingly well with some cream cheese spread or cheese.
TIPS ON HOW TO MAKE THE CASSAVA CHEESE BITES
The recipe is so easy to make that there really isn't anything else to it! However, if you love cheese, I would recommend to add even more cheese. Yellow cheeses, such as gouda, muenster, or cheddar will taste great with it!

INGREDIENTS:
350g of boiled cassava
100 g de low fat mozzarella
1 teaspoon of salt
1 teaspoon of baking powder
1 egg
DIRECTIONS:
Add enough water in a pan to cover the cassava and heat until the water boils. Place the cassava in the water. Reduce the heat to medium high and continue to boil until the cassava is soft and you can easily mash it with a fork. It takes around 20-30 minute.
After the cassava is ready, begin to pre-heat the oven to 350 F.
In a bowl, mash the cassavas with a fork until you get a purée consistency.
Add the egg, salt, and cheese. Continue to blend together until all of the ingredients integrate together.
Using a cookie spoon scoop or a normal spoon, form round balls. I used a cookie scoop and the size of them were similar to a golf ball.
Place on a non-stick cookie sheet and bake for 35-40 minutes. Serve warm and enjoy!
