VANILLA SPONGE CAKE

Learn how to make an easy sugar-free vanilla sponge cake with only 6 ingredients.

This vanilla cake is so easy, and it takes 10 minutes to make. The texture is so spongy that it looks like a full-on vanilla cake.


It replaces sugar with the monk fruit sweetener and it replaces the all purpose flour with almond flour. It has no butter or coconut oil and is simply the easiest and yummiest healthy vanilla cake that I have tried.

TIPS ON HOW TO MAKE VANILLA CAKE

• Make sure to follow the instructions as stated. Beating the egg whites first are the key to get a spongy texture.

• I baked my cake in a small conventional oven and it took 30 minutes to bake. If you are using a standard oven, I would suggest inserting a knife after 30 minutes to see if the knife comes out clean. If not, place it back in the oven and bake for 15-20 more minutes. Lastly, if the top of the cake seems to be very brown, you can cover the cake with some aluminum on top and place it back in the oven.

INGREDIENTS:

• 3 eggs

• 1 and 1/4 cup of almond flour

• 1/4 cup of monk fruit sweetener

• 1/2 cup of non-fat Greek yogurt

• 1 tablespoon of vanilla extract

• 1 teaspoon of baking powder

• Optional: a handful of sugar-free chocolate chips


DIRECTIONS:

• Preheat your oven to 350 F.

• Using a blender, or an electric mixer, separate the egg whites from the yolk and place all of the egg whites in the electric mixer. Beat the egg whites until foamy (around 2-3 minutes).

• Next, begin adding the yolks one by one, mixing after each other.

• Mix in the monk fruit and vanilla extract.

• Add half of the almond flour and baking powder and mix with the electric mixer (or blender). After well mixed, add the rest of the almond flour and greek yogurt.

• Pour in a greased baking pan of your choosing. Add the optional chocolate chips on top. Bake for 30 minutes or until a knife inserted in the middle comes out clean.

• Enjoy!
